A surprise dinner! (WIAW)

Hey, friends! 

I’m here to share with you my eats from yesterday. I know my posting hasn’t been very consistent as of late, but snapping pictures of my eats is manageable. My brain is filled with medical nutrition therapy + future career plans, so thinking much beyond that has been a challenge.

Yesterday I woke up with a raging headache. I have not been getting all the sleep I should and I blame it on myself. Sleep hygiene has not been a thing for me. I did so good the one week I made it a goal, but since then I’ve made excuses for staying up later than I should and then being surprised when I don’t automatically fall asleep as soon as I hit the bed?

I kept breakfast simple with baked oatmeal and a spoonful of peanut butter. All last week I had blueberries to top my baked oatmeal with, so I am missing those this week. I did add flaxmeal to this batch of baked oatmeal, which made the flavor different in a good way.

Lots of coffee + a piece of super dark chocolate was also had. I am all out of brazil nuts so I haven’t had my daily brazil nut in over a week! Hopefully the tuna I’ve been having almost everyday for lunch is satisfying my selenium needs 😉
For lunch I had a tuna salad and avocado sandwich, roasted carrots sprinkled with turmeric, and applesauce. My tuna salad was made with greek yogurt, a spoonful of mayo, diced onion, chopped celerly, and dill.

I know what you’re thinking- isn’t that the same breakfast and lunch as last week? I found the baked oatmeal + sandwich combo from last week satisfied me and kept me full for a long enough time, so I repeated it this week. 

Around 3 pm, I snacked on half a Macro bar. I love those bars.

After work, I went for a run with a friend. The weather was incredible! It must have been 75 degrees- and sunny. I know I should probably want to experience some winter, but honestly I’m perfectly okay skipping that season. 

I called Terry on my way home and he offered to get dinner started. I had been craving nachos all day, so I asked Terry to brown the turkey and shred the cheese. He went all the way though and did the whole thing! And unlike me, he was not stingy with cheese or meat. He even threw in some salt & pepper kettle chips :O. 

I made a nice dent in the nachos and enjoyed them with a plate of spinach (#eatyourgreens), sour cream, and salsa.
During commercials while watching This is Us (too many feels!!), I used my mini-chopper to blend up some banana ice cream for dessert. One banana + a sprinkle of pb2 + splash of almond milk. My mini-chopper is not a blender if you couldn’t tell, haha. Still very yummy!
And that’s it- a days worth of satisfying, delicious meals and snacks.

  1. Salt and vinegar kettle chips!? Whoa-hoa Terry for the win. There’s a nacho pro right there.
    I would say having your brain full of nutrition science and career plans is a titch more soul-giving than consistent food blogging :). The lack of sleep must be feeling frustrating though. I hope your runs have been helping to rev some energy in you. I know those temperatures would sure do that for me. Our weather is disgusting as ever and I am soooooooo done with it. Over and done. Be gone.

  2. Mmmm…salt & vinegar kettle chips are so good! Nachos might be one of my favorite meals ever. I can’t wait to hear about your future RD plans. I am sure it’s super stressful now, but it’ll be so so worth it in the end 🙂 This morning, I had some more of the blueberry snack bars and 2 hard boil eggs. I have been on a hard boiled egg kick lately!

  3. No shame in repeat breakfast and lunches. Speaking of which, those turmeric roasted carrots look really yummy! (So sweet of Terry to surprise you with supper.)
    For breakfast today, I finished off my leftover quinoa and pesto for one of Kat’s quinoa and egg power bowls.
