Closing time

I just got back from a whirlwind of a week at a camp for children and adolescents with Type 1 Diabetes. It’s been my favorite week of the summer for the past two years and I have a feeling I won’t be able to surpass this one for the rest of the summer either. This year I was in more of a leadership role which meant a week full of moments of high stress and lots of victories too. I’m so thankful to God for this opportunity.
As you may have noticed, my blog posts have slowly decreased in number and in quality. While I once loved sitting down to write, I no longer feel the desire. I thought it was a phase, but now I see it’s related to an overall shift and transition in my life. I am no longer tied to school or an internship and have a lot of free time on my hands to do as I please. I still love cooking, baking, trying new foods, and studying up on nutrition, but hanging out behind a computer isn’t something I feel like doing much as of late.

One thing I love about blogging is that it allows me to tap in to my creative side while also reflecting on my experiences. It gives me a place to chronicle my life so that I can hang on to memories a little more easily. What I don’t love about is that it’s time consuming and has started to feel a bit like a chore. I don’t mean to sound negative about it at all-  it served a wonderful purpose in my life for three years. I don’t know if I’ll abandon it forever, but this formal type of blogging is not what I want to do at the moment. 
I’ve made some amazing friends through blogging and hope that I’ll hang on to some. I am sure that I will continue to be inspired through their posts as well. I’ll still be on Instagram, so feel free to keep up with me there. 

I’m ready to take on this new life of free time and figure out the kind of life that will be most fulfilling for me.

Our 3rd Anniversary

Yesterday was a day of happiness + celebration of our 3rd Anniversary.

Looking back to the day I got married, I’m not sure I really understood what it meant to love Terry. I loved him, but these past three years have taught me what love really looks like. I’ve learned that love can sometimes be a feeling, but other times it is simply a truth. Marriage is a beautiful thing.

On to yesterday… I anticipated a very normal day, since I was working until 5 and we had church at 7. I’d already apologized to Terry for my lack of planning for the big day since this month has been rather crazy for me. He brushed it off and stayed quiet. You see, Terry is big on surprises. Remember my surprise birthday party? That was awesome. Just like that, yesterday was filled with surprises.

Surprise #1: Terry was already awake working on breakfast when I woke up. He made me a pancake from the recipe on my blog! (He used a large pan so it looks kind of funny). 

He also toasted me half a bagel… because, why choose? This breakfast was a bigger than what I normally have, but it kept me full for a long time! I’ll have to remember that.

Surprise #2: I came home to this giant trifold on the table: 

This was the best surprise. On the laptop was a song he wrote along with a slideshow of pictures from our married days. The song is really good- hopefully he’ll let me share it on here in the future. He’s a bit of a perfectionist.

I loved the hydrangea in a jar. It’s from our little hydrangea plant that Terry got me for last year’s anniversary. It was our wedding flower.

In our bedroom, he had instructions on where to meet him. I got dressed, drove to down to Columbia, and found a handsome man with a great new haircut standing in front of our current favorite place to eat, East Bay Deli.

Terry mentioned that he wanted to pick a place that was “our place”, but we don’t really have one of those. We don’t go out to eat super often, so when we do we like to try something new. We’ve gone to East Bay three times which is a feat for us. The food was super yummy.

I love East Bay because they have an incredible salad bar. Look at those loaded bowls!

After great conversation over dinner, we headed down the street for dessert. We enjoy the atmosphere at Kaminsky’s dessert bar, so that was an easy choice for us. I knew what I wanted as soon as we walked in:

A massive brownie sundae to share. Coffee for me & milk for him. The brownie was warm and fudgy and the vanilla ice cream was some of the best I’d ever had. However, the nuts really made it.

We were both pretty exhausted by the end of the night, but it was fun to make a weeknight so special!

Happy Birthday Dinner

Hey guys, I’m hopping in for a quick minute to share how we celebrated Terry’s 26th birthday. 

Being that he just got back from a weekend trip, we decided to keep things rather low key for his Monday night celebration. We decided to repeat our idea from Valentine’s Day and have dinner at home and dessert out. 

Terry loves Italian food, so for our dinner I made chicken parmesan. I based my chicken off of this recipe, but was a little more liberal with the cheese and sauce. 

We had angel hair pasta with more sauce which was cooked just perfectly. I love the thin noodles. And then I went boring and steamed a bag of veggies because breading chicken was a big deal for a Monday night. If it looks like something is missing, it’s because I totally forgot to make some garlic bread… 

And then we hit the town for a sweet treat. We went to Kaminsky’s again, which is a very cool, dark, and relaxing spot downtown. It was a great spot for us to get a chance to just talk without distraction. I felt energized that evening so deeper conversations felt easier than they normally do after working, exercising, and cooking dinner. 

I kept my mouth shut and didn’t try to sway Terry one way or another when it came to choosing a dessert, but I was excited when he decide to go for the German chocolate cheesecake! I got coffee and he got milk to wash it down. 

We thoroughly enjoyed our cheesecake and even talked about what we want to try next time- because there will be a next time!
