What I Ate

Look at me go! I remembered to photograph all my eats on Monday. Now it’s What I Ate Wednesday again on the blog. 

Breakfast was pumpkin baked oatmeal with peanut butter and blackberries. I made the baked oats a little different this time, exchanging a 1/2 cup of the oats for 1/2 cup protein powder. I have a container of protein powder still lingering around here and I’m ready to say goodbye. Tasted fine in the oats though.

With plenty of coffee, of course. And a sliver of 85% dark chocolate as always.

Around 10:30 I became very hungry, so I unpeeled an orange to quickly eat. They are SO much easier to peel at room temperature, FYI.

Lunch was an egg salad sandwich with leftover carrot fries. That egg salad was protein PACKED since I made it with greek yogurt. 

Speaking of greek yogurt, I had some key lime greek yogurt in the afternoon for a snack. it’s amazing to me how much tastier yogurt with some fat in it is compared to non-fat.

I snacked on some chocolate covered almonds when I got home and then proceeded to lay on the bed for a good 20 minutes talking to Terry. 

Eventually I got up to make dinner. Taco stuffed sweet potatoes!

The mixture had ground turkey, corn, tomatoes, spinach, onions, garlic, cumin, red pepper flakes, and sea salt. I topped mine with sharp cheddar cheese, cilantro jalapeño hummus, and salsa. The hummus is from Aldi and it’s my favorite ever. Me and Terry were both cleaning our plates for this dinner. So good!

We went for a walk after dinner because the weather is just so amazing and it’s finally not getting dark super early. 

After getting a little work done, I was in the mood for a snack. I planned to have the banana “ice cream” I made over the weekend, but I was really in the mood for some leftover frozen opera torte cake. So I went with the cake + a glass of almond milk! 

Honor those cravings! 

We started watching Thirteen Reasons Why and I have mixed feelings about it, but I am definitely intrigued. Anyone else watching it or have watched it?

  1. My favorite go-to snack lately has been classic PB&J. I think after years of eating it every day I needed a break…but now I really crave it again haha! (That cake looks so good, by the way. I’ve never heard of that kind before.)

  2. Aldi’s brand yogurt has gotten better in recent years. I can’t wait for them to introduce a soy or coconut milk version. I see it coming! My favorite snack has been banana with peanut butter. After my last race I was all about the chocolate, but those cravings has subsided (if you just honor them and eat the chocolate the cravings go away people!) and so now it’s sweet bananas and regular peanut butter. Not the natural stir stuff, my favorite kind: Skippy Super Chunk 🙂

  3. Glad to see you are still going on the sliver of dark chocolate at breakfast. I hope you never stop that. I’ve been craving a really good solid tuna or egg salad sandwich lately. I need to go find myself one. My favorite snack right now is Sarah’s sunflower chickpea chocolate chip bars. They are seriously the best and I am going to need another batch for next week.

  4. I really love seeing your baked oatmeal creations. Baked oatmeal + peanut butter and fruit is a really comforting easy yummy breakfast. And now I’m craving egg salad; I haven’t had egg salad in so long.

    My favorite snack as of late is a really big mug of cereal in the evening before I go to bed. 😀

    And those taco stuffed sweet potatoes? YUM! I always love a savory stuffing in a sweet potato because the sweet and savory combines so well.

  5. I love the idea of baked oatmeal – haven’t done that before. I typically just do regular egg white oats in the morning. And I LOVED stuffed sweet potatoes!!YUM!

  6. Yay for honoring cravings! 🙂 My favorite snack lately is roasted chickpeas. I’m blanking on the brand we buy but I have been all about the sea salt and falafel flavors lately. So crunchy, flavorful, and satisfying!
